The retail behemoth turned to U.S. military industry to adopt its emerging food technologies. On Friday, the media announced that Amazon would soon open up a new startup dubbed as 915 Labs. This whole new company would be in charge of microwave assisted thermal sterilization or MATS technology. This new method wouldn’t have happened without the work of researchers at Washington State University.
This represents a new way to deliver fresh produce without the need of the refrigeration process. Amazon might soon make this service available through its Amazon Fresh project, fulfillment centers or delivery systems.
This revolutionary technology was first created for the military industry yet it can change today’s food delivery landscape. The international retailer intends to promote ready-to-eat dishes such as a vegetable frittata or beef stew as of next year.
The advantageous side of this new business is that the price will be extremely competitive as the company doesn’t need special stocking vans for refrigeration. Therefore, it will be cheaper to order such a meal instead of a restaurant take-out.
MATS Technology Requires Placing the Sealed Food in Pressurized Water and Then Microwaved
The new method requires the sealed packages of food to be in pressurized water. Afterward, the products are microwaved for several minutes. This way, the flavors, and texture that are left in the process of killing bacteria will be preserved unlike all the traditional processing methods. On top of that, they can remain edible up to a year sitting on a shelf. This would represent the perfect delivery meal for any business or household.
